Producing thousands of handcrafted dim sum daily here at Sun Sui Wah, Chef Alan has been orchestrating and leading the dim sum team here since 1995. Our dim sum are made fresh daily and every step is handled with lots of TLC. We'd like to introduce our "making of" series and share some of the hard work behind the scenes. First we'd like to introduce the BBQ Steamed Bun.

The dough, the ratio between meat and bun, everything has to be calculated with precision. It is mesmerizing to see Chef Alan do his craft as he makes everything looks effortless. He embraces tradition and therefore everything is made the way he was taught from his mentors from the generations before him.
